    Bibingka Pancakes Baked in a Skillet

    These Bibingka Pancakes are made with a bibingka boxed mix. It get's this breakfast on the table in 12 minutes! So fast!

    Here is the deal. I have been trying to make a Bibingka dutch baby for so long. I've tried about 6 times with different recipe variations and it never works out. Gah. So out of the frustration these Bibingka Pancakes made in a skillet were born. Made with a bibingka box mix these pancakes just get poured into a skillet and baked for 12 minutes. It makes for a great easy breakfast recipe!

    Ingredients for Bibingka Pancakes

    This is what you will need to make the pancakes.

    Eggs - This recipe uses lots of eggs, so it will be more on the eggy side. This will make it nice and fluffy.

    ½ Cup of White King Bibingka Mix. I have linked through my Amazon store, but it is cheaper if you get it from your local Filipino Grocery store.

    ½ Cup Coconut Milk. We are making bibingka so you must use coconut milk!! In a bind yes you can use other milks, but coconut is preferred.

    Butter - This will grease the pan and also give it flavor. You can use real or vegan butter.

    Blend the Batter

    You are going to make the Bibingka Pancakes batter in a blender! I'm telling you this will go super fast. But before you make the batter first pre-heat your oven to 425F. Also stick in your skillet in the oven while it is pre-heating.

    Now while the oven is heating up put the bibingka mix, eggs, and coconut milk in the blender in that order. Then blend for 30 seconds up to a minute until you have a nice smooth batter.

    Bake the Bibingka Pancakes

    Once the oven is at the right temperature take out the skillet with oven mitts!!! Then add in the butter and leave it to melt. You will need about 3-4 tablespoons.

    Now pour in the batter and put it in the oven right away. Leave to bake for 12 minutes.

    How to Serve

    Using oven mitts again! Take the just baked Bibingka Pancakes out of the oven.

    Then dust with powdered sugar.

    Slice the Bibingka Pancakes into 8 portions and serve right away with some fruit and more dusting of powdered sugar. You can also drizzle them with maple syrup, honey or even condensed milk!

    Questions You May Have

    Can I just use regular rice flour??

    Yes you can. Just make sure it is NOT sticky rice flour. You need to use regular rice flour to make this. Just use ½ cup of rice flour along with a pinch of salt.

    Where can I get the box mix?

    You can order the bibingka box mix online, but it is cheaper to get them in person at your local Filipino Grocery store.

    Equipment

    • Blender
    • 9 inch skillet

    Ingredients

    Batter

    • ½ Cup Bibingka Mix
    • 4 Eggs
    • ½ Cup Coconut Milk

    For the Pan

    • 4 Tablespoons Butter

    Garnish

    • 2 Tablespoons Powdered Sugar
    • Variety of Fresh Fruit
    • Maple Syrup or Honey or Condensed Milk

    Instructions

    • Prep. Pre-Heat oven to 425F with oven safe skillet inside the oven.
    • Make Batter. Put the bibingka mix, eggs, and coconut milk in the blender in that order. Then blend for 30 seconds up to a minute until you have a nice smooth batter.
    • Butter. Once the oven is at the right temperature take out the skillet with oven mitts!!! Then add in the butter and leave it to melt.
    • Bake. Now pour in the batter and put it in the oven right away. Leave to bake for 12 minutes.
    • Serve. Using oven mitts again! Take the just baked Bibingka Pancakes out of the oven. Then with powdered sugar. Slice and serve with your choice of fresh fruit and syrup.
