    Cold Brew Pandan Infused Coffee

    This Cold Brew Pandan Infused coffee was inspired by a drink from FOB Kitchen.  It's super refreshing and perfect to drink in the heat.

    Cold Brew

    Ohh yeah.  This is my second cold brew recipe.  The other one is more mint forward and I thought this time, it would be good to infuse some Filipino flavor in it.  Enter - pandan.

    This drink was inspired by our brunch at FOB Kitchen.  On the menu was Pandan Iced Coffee.  It was super refreshing, with a hint of something different from the pandan.  Then I remembered I had this recipe where I soaked the coffee in coconut water overnight.  A pandan version had to be made!

    Iced Coffee

    I took out some coffee that we bought from the Philippines and started soaking them.  Place about 8-10 pandan leaves in a tall bottle and pour a liter of coconut water with the coffee.

    I like soaking them overnight, but found it best when it's been in the refrigerator for at least 2 days.

    The drink is almost like a dessert when you top it off with some silky smooth coconut milk.

    Oh when serving don't forget the flower.

    Ingredients

    • 1 Liter Pure Coconut Water make sure there are no added sugars in it
    • ¼ Cup Ground coffee
    • 8-10 6 inch pandan leaves
    • ¼ Cup Coconut milk

    Instructions

    • Pour the coconut water into a pitcher and drop in the ground coffee and pandan leaves, mix well until you see the coconut water turn brown. Place in the fridge overnight to steep.
    • To serve put ice in 4 glasses and strain over the cold brew coffee.  Top with coconut milk.

    Notes

    Pandan leaves can be found frozen at Seafood City or at other Asian Markets.

    Let me know if you make this drink or just try making cold brew with coconut water.  It's a game changer because you don't need to add sugar.  The coconut water makes the coffee less acidic and is naturally sweet on it's own.
