    Rice Crispy Treats

I haven't had rice crispy treats in so long, I actually don't know what made me want to make them.  I do know that I wanted to make them healthy-ish.  These Golden State Rice Crispy Treats are all that!  I still used marshmallows, but found vegan ones and added a whole bunch of goodness to them as well.

    Golden State of Mind

You all know how much I love my Live24K and Pearl Butter and I managed to find a way to marry them together apart from adding them together in a latte.  Put all of them in a rice crispy treat!!!  Gah.

Golden State Vegan Rice Crispy Treats

The treat is filled with my favorite golden milk mix as well as some vegan vanilla protein powder and MCT oil.  Overall this vegan rice crispy treat is filled to brim with nutrients that makes it totally okay to make it once a week.  It's a great way to get sneaky to add more goodness to your kids snacks.  They would have no idea!

When I was making them the thought did occur to me that maybe my family won't eat these, because of all the turmeric and protein powder in the treats.

But I was proven wrong.  All the treats are gone.  I was going to give some to a friend, but lucky she canceled a meet up as I have no more treats to give.

I cut the treats into rectangles and dipped the tip into some pearl butter and topped it off with some sprinkles (that are also colored with turmeric!) and cornflowers.  When I was sprinkling the corn flowers it started to occur to me that they were the Golden State Warrior colors.  Hence the name was born.  Golden State Rice Crispy Treats.  I hope you try them!  Let me know on Instagram if you do and tag me with #rezelkealohaeats.

    Ingredients

    • 1 Box Puffed Brown Rice Cereal
    • 1 Bag Mini Vegan Marshmallow
    • ⅓ Cup MCT Oil
    • 2 Tablespoons Live24K Blend
    • 1 Scoop Vegan Vanilla Powder
    • 1 Tablespoon Powdered Ginger
    • 1 Teaspoon Cinnamon
    • Glow Getter Pearl Butter
    • Yellow Ticings Sprinkles
    • Blue Cornflowers

    Instructions

    • Spray and line a 9x13 pan and set aside
    • Place all the powders in a small bowl and mix well.  Add in the MCT oil and blend until it's fully incorporated.
    • Place the rice in a large bowl and place next to the stove.  In a medium sauce pan add in all the marshmallows and the MCT oil mix.  Turn the heat up to medium/low to melt the marshmallows slowly.  You have to watch it so it doesn't burn.
    • Once the marshmallows have melted into the oil mix well and then dump it over the brown rice.  Use a wooden spoon to mix well and fast.  Once all the rice is coated with the marshmallow mix pour in the pan and press down to flatten the treats to make them even.
    • Cool in the pan for about an hour and then loosen them and cut in to squares or rectangles.
    • Melt some pearl butter and either dip or drizzle on the top.  Top with sprinkles and corn flowers.  Let the butter set and then serve!
