    How To Make Iskrambol

    Super simple Iskrambol recipe made with strawberry milk, shaved ice, chocolate syrup and marshmallow fluff. It's topped with a Neapolitan ice cream to bring all the flavors together.

    Iskrambol or Ice Scramble is a Filipino dessert that kids used to get after school. My Mom grew up eating these from vendors outside her school.

    It's super cheap as the original recipes were made with shaved ice, powdered milk and a drop of flavoring like banana or strawberry. Some vendors added chocolate syrup, mini marshmallows and sprinkles.

    You are then supposed to mix it or scramble it together and drink it up. Such a fun treat!

    My Iskrambol version uses strawberry milk and some ready made marshmallow fluff. It does turn into toffee when you add the shave ice, but it's part of the fun. My daughter likes to suck on the marshmallow fluff to get it soft again. I added a scoop of Neapolitan ice cream (chocolate, strawberry, vanilla all in one) on the top to make it a bit richer. It works and makes it seem like you are eating a Halo Halo!

    Iskrambol Ingredients

    This is a recipe for 1, but you can easily make more using these base ingredients.

    Chocolate Syrup - I like to add a pool of chocolate syrup to the bottom of the glass and also spread it around the inside of the glass. It looks good presentation wise and at the end of the Iskrambol, you get a hit of chocolate at the end.

    Marshmallow Fluff - For this you can use the ready made fluff and spread it on the inside of the glass or go with mini marshmallows instead and float it in the drink.

    Shaved Ice - You will need about 2 cups of shaved ice per glass.

    Strawberry Milk - I like using strawberry milk to amp up the strawberry flavor instead of using just flavoring.

    Neapolitan Ice Cream - Normally ice cream is not added, but I thought why not! Also Neapolitan has the same flavor profile as an Iskrambol anyway.

    How to Build Your Iskrambol

    Use a 12oz or 16oz glass.

    Chocolate sauce all over inside of glass.

    Add two tablespoons of chocolate sauce to the bottom of the glass. Dip a spoon in the pool of chocolate and smear it all over the inside of the glass.

    Next add a tablespoon of marshmallow fluff on the inside rim of the glass. I know it's going to be messy, but so worth it.

    Adding shaved ice

    Now pack in the shaved ice into the prepared glass. Use more than you need.

    Pouring in strawberry milk

    Pour in about ½ cup of strawberry milk all over the ice.

    Add more ice if the strawberry milk, melts anyway and top with more milk. The more strawberry milk the better!

    Adding ice cream on the top of Iskrambol

    Finally add a scoop of Neapolitan ice cream on the top and serve right away.

    How do you eat it?

    Well you make a huge scrambled mess! Eat some of the ice cream and ice that is on the top and once you have room use a spoon to mix the Iskrambol all together.

    You can alternate drinking it and scooping large chunks of hard marshmallow fluff.

    Equipment

    • 1 12oz - 16oz Glass
    • Shave Ice Machine

    Ingredients

    • 2 Tablespoons Chocolate Syrup
    • 1 Tablespoon Marshmallow Fluff
    • 2 Cups Shaved Ice
    • ½ Cup Strawberry Milk
    • 1 Scoop Neapolitan Ice Cream

    Instructions

    • Add about 2 tablespoons of chocolate sauce to the bottom of the glass. Dip a spoon in the pool of chocolate and smear it all over the inside of the glass.
    • Next add a tablespoon of marshmallow fluff on the inside rim of the glass. 
    • Pack in the shaved ice into the prepared glass. Use a spoon to help push it down.
    • Pour in about ½ cup of strawberry milk all over the ice. 
    • Add more ice if the strawberry milk, melts anyway and top with more milk. The more strawberry milk the better!
    • Finally add a scoop of Neapolitan ice cream on the top and serve right away.

    Notes

    For a less messy Iskrambol you can replace the marshmallow fluff with mini marshmallow pieces.  It can be added to the top of the ice after you pour in the strawberry milk and before the scoop of ice cream.
