These Labanos (Daikon) Fries get nice and roasted in the oven, which amps up the flavor.  To accompany the fries a creamy “Sinigang” dip is made with tamarind sauce.

We are continuing on with the vegetables in The Bahay Kubo Cooking Series and the next veg is Labanos.  What is Labanos?  It sounds so exotic, but it’s just the humble daikon radish.

Labanos or Daikon is used in soups, stews or stir fry’s in several Filipino Dishes. The thing is my husband is not a fan of any kind of radish. He is not into the bitter aftertaste, so I had to think how can I cook it so he can power through it.

I thought roasted like fries!! Then make a creamy dip to go with it. Many ideas were going through my head and boom!

The flavor of Sinigang which is a sour broth soup that can be made with guava, tomatoes or tamarind as the souring agent. For the dip I went with some tamarind sauce and mixed that with some mayo and onion powder. Chefs kiss I tell you.

When he saw it on the table he was all I know those are radishes, because you bought 2 big ones and I don’t see them anymore. (Could not trick him, darn it).  He took one and dipped it in the sauce and said not bad and hand several more. I would say that is a win.

Let’s Make Labanos Fries

Here is what you would need to make the fries.

First heat up the oven to 475 Degrees and line a baking sheet with foil or silicone mat.  Next place the labanos in the lined tray and drizzle with olive oil and add in the garlic powder, salt and pepper.

Make sure the fries are spaced apart and roast for 30 minutes flipping each labanos over half way through the cooking time.  Once done it will look nice and golden.

How to Make The Creamy Sinigang Dip

While the fries are roasting make the dip.  Here is what you need:

Then mix all the sauce ingredients in a bowl and set aside.

How To Serve The Fries

Last but not least put the roasted fries on a platter with the sauce on the side for dipping.

Ingredients

For the Labanos Fries

  • 2 Pounds Labanos Peeled and cut into the shape of fries.
  • 1/4 Cup Olive Oil
  • 1 Tablespoon Garlic Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper

For the Sinigang Dip

  • 1/2 Cup Mayonnaise
  • 1 Tablespoon Onion Powder
  • 1 Teaspoon Tamarind Sauce add more if you want it more sour
  • 1 Teaspoon Salt
