    Raspberry Lychee Taho Recipe

    This Raspberry Lychee Taho recipe is made with fresh raspberries, canned lychee and sweet dessert tofu and of course chewy tapioca pearls.

    I dunno. This recipe came to me when I was walking through the grocery store. I saw raspberries and remembered I had canned lychee and a packet of dessert tofu at home. When you cook so much like I do, random recipes just pop up in my head. What can I say it's a talent I get paid to do!

    Now if you didn't know Pierre Hermé invented the iconic flavor combination of raspberry and lychee in a macaron when he worked for Ladurée in the 1990's and brought it over to his own shop when he struck out on his own.

    It's one of my favorite flavors as well. Especially when you add just a touch of rose water. I didn't put any in this recipe, but you are free to do so.

    Ingredients

    Tapioca Pearls - I used the white mini ones. At my local 99 Ranch they had lychee flavored ones, and if you get those it will make the lychee flavor shine even more.

    Dessert Tofu - Again from my local 99 Ranch. I would recommend getting the almond flavored one. These desert tofu is much softer and silky and sweet than normal tofu.

    Fresh Raspberry - I used about half a cup of fresh ones. You can add even more.

    Canned Lychee - Using canned is the best option as it's soaked in syrup that you can use for extra flavor in your Raspberry Lychee Taho. Make sure it's chilled before you add it in.

    How To Make Raspberry Lychee Taho

    Tapioca pearls on the bottom.

    Spoon some tapioca pearls as the bottom layer in your serving glass.

    Topped with fresh raspberries.

    Top with some fresh raspberries.

    Adding lychee.

    Then some pieces of lychee.

    Dessert tofu layer.

    The final layer is some spoons of dessert tofu.

    How To Serve Raspberry Lychee Taho

    Repeat the layers until you get to the top and decorate with more tapioca and raspberries.

    Pouring in soy milk.

    You can also pour in some soy milk.

    How To Jazz It Up

    Here are a few ways you can amp up the flavor.

    1. Add raspberry jam.
    2. Pour in soy milk.
    3. Add a touch of rose water.
    4. Use lychee flavored tapioca pearls.

    Equipment

    • 1 8 oz Glass

    Ingredients

    • ¼ Cup Cooked Tapioca Pearls
    • ½ Cup Raspberries
    • 150g Almond Flavored Dessert Tofu
    • ½ Cup Canned Lychee Chilled

    Instructions

    • Spoon some tapioca pearls as the bottom layer in your serving glass. Top with some fresh raspberries. Then some pieces of lychee. The final layer is some spoons of dessert tofu.
    • Repeat the layers until you get to the top and decorate with more tapioca and raspberries.
