A refined take on halo halo

This refined take on Halo Halo is perfect for the last day of this heatwave we have been having in the Bay Area.

Traditionally Halo Halo is made with fruit and chickpeas that have been soaked in sugar syrup and topped with flan and ice cream.ย  Sure the ice dilutes the sweetness it a little bit, but that’s way too much sugar for my taste buds.

I made a version using fresh fruit and coconut milk and coco whip.ย  With the addition of lemon balm it provides a refreshing and cooling snack that won’t weigh you down.ย  When it’s hot like this I tend to not eat so much heavy food.

You do need one special piece of equipment which is a shave ice maker.ย  As a Filipino it is one of the things we always have in the cupboard to make our own Halo Halo when the mood strikes.

It does start to get messy when you start the halo halo (translated to mix mix) process.ย  It’s part of the fun too!

Halo Halo

Ingredients

  • 8 Strawberries diced
  • 1 Cup of diced or balled melon
  • 4-6 cups of shaved ice
  • 1 Cup of coconut milk
  • 1 Cup of coco whip or vanilla ice cream
  • Few springs of lemon balm or mint
  • Handful of coconut chips

Instructions

  • Evenly distribute the strawberries and melon into two glasses. Tightly pack the shaved ice into each glass and drizzle the coconut milk into each glass. Top with the coconut chips and a scoop of coco whip and garnish with lemon balm or fresh mint.
  • Make a mess and enjoy!
