This Calamansi Eaton Mess is made with Calamansi Curd, ready made meringues and coconut yogurt. So light and refreshing and easy!
We love super easy recipes around here and this Calamansi Eaton Mess is one of them. It's so easy that I didn't even take step by step photos as all you do is layer up all the ingredients on top of each other.
Eaton Mess is known as a classic British dessert using strawberries, and cream, but of course you are here so we had to do a Filipino twist by adding Calamansi Curd to one of the layers.
Ingredients
This is what you will need to make Calamansi Eaton Mess.
This recipe is quite freeform. You can make just one or several. This recipe will be made for 1, but can easily be scalable.
Calamansi Curd - The key ingredient. Use my Calamansi Curd recipe and have it ready to layer.
Ready Made Meringues - You can make your own, but if you made my Sans Rival Cookies, you will have some meringues left over. This Calamansi Eaton Mess is the best way to use up the leftovers.
Coconut Yogurt - This replaces the cream in an original Eaton Mess, but you can use whipped cream instead. Coconut yogurt just makes for a lighter dessert. You will need a cup for each serving.
How Serve Calamansi Eaton Mess
Find a glass that can hold 6-8oz. Spoon in half of the coconut yogurt on the bottom of the glass then add a tablespoon of Calamansi Curd and crush one meringue on top of the curd. Repeat the layers finishing with a whole meringue.
It's really that easy. Best to serve it within an hour of building.

- 2 Meringue Look for ones about an inch wide
