    Calamansi Juice

    Calamansi Juice is the perfect thirst quencher anytime of the year. Made with tarragon and honey infused water gives it a touch of licorice flavor.

    When you do not live in the Philippines and you manage to find or grow Calamansi, juice is always the first thing you should make. Always. This one is quite unique as the water is infused with tarragon and honey.

    I first encountered tarragon in the Philippines when I was staying at Sonya's Garden in Tagaytay. At breakfast they would come out with a pot of tarragon tea as a way to help you digest the food you just ate.

    It was wonderful and I was hooked. I've never associated tarragon with Filipino food before and now I do because of that core memory. This Calamansi Juice is an ode to all the herbs growng in Sonya's Garden.

    Ingredients for Calamansi Juice

    Using fresh Calamansi is a must in this recipe. I can't make Calamansi juice with the ones that come in the bottle. Save this recipe when you have the real stuff. You will probably need between 3-5 depending on how juicy they are. Two tablespoons worth of juice is what you need.

    Honey, the perfect sweetener I think that complements Calamansi. Source the best local honey you can find.

    Tarragon - this herb has a slight licorice flavor. It's actually great as a tea on its own. Sometimes during the summer I have a jug of water with sprigs of tarragon in it, just because.

    Where can I find fresh Calamansi?

    Ohh, this is a hard one. In the San Francisco Bay Area you can try your luck at the Daly City Farmers Market. Sometimes I seen that it's available at the Fremont Farmers Market. I have been able to get it through Good Eggs now and then.

    You do need to make a friend who has a Calamansi Tree or try to grow it yourself. Sometimes Home Depot have them or even Seafood City.

    How to Make it

    First we are going to make the tarragon infused water. Steep 3 stalks of tarragon in 2 cups of water overnight in the refrigerator.

    The next day or a few days after take the tarragon stalks out of the water and add in the honey. Mix the honey until it is dissolved in the water.

    Add in the calamansi juice. Taste and adjust if needed. You can add in more calamansi juice and/or honey to your liking.

    Fill 2 highball glasses with ice and divide the Calamansi Juice into each glass equally. Garnish with a sprig of fresh tarragon.

    Ingredients

    Tarragon Infused Water

    • 3 Stalks Fresh Tarragon
    • 2 Cups Water

    Calamansi Juice

    • 4 Tablespoons Freshly Squeezed Calamansi Juice
    • 4 Tablespoons Honey

    Instructions

    • Make the Tarragon Infused Water. Steep 3 stalks of tarragon in 2 cups of water overnight in the refrigerator.
