    How to Make Cold Brew Coffee Granita

    This refreshing Cold Brew Coffee Granita is made with coconut water and flavored with pandan leaves.  It's a nice cool treat for the last hot days of summer.

    Cold Brew Coffee Granita

    The best way to beat the heat is to eat ice, but make it fancy!  This one is based on my Cold Brew Pandan Coffee using coconut water instead of plain water. Let me tell you the coconut water is a game changer! Then I froze it and cheated and used my shave ice machine to grind the ice. Of course you can do it the traditional granita method by scraping with a fork.

    What Ingredients Do You Need?

    You really don't need much just these 4 ingredients and there is no cooking involved.  Just lots of fridge and freezer time.

    1 Liter Coconut Water
    ¼ Cup Ground Coffee
    8-10 6 inch Pandan Leaves
    ¼ Cup Coconut milk (Optional)

    How Do You Make Cold Brew Coffee Granita?

    Pour the coconut water and ground coffee in a jug and leave in the refrigerator overnight. The next day mix well and then pour the cold brew in a shallow container and freeze.  Use a fork to scrape and make the granita.

    Note:  If you are using a shave ice machine, pour the cold brew into the molds provided, then put in the machine and shave it straight into a cup.

    You can enjoy it as is, or for a little creamy texture you can add some coconut milk or even ice cream if you dare!
