This Dark and Stormy Mocktail is inspired by a Filipino candy made with dried sweet mangoes and tamarind.  The drink is topped off with Ginger Beer, which makes it outright refreshing.

    Mangorind Dark and Stormy Mocktail

I have a super quick and refreshing cocktail for you.  It's inspired my a candy called Mangorind.  Mangorind is a hybrid Pinoy candy made from dried sweet mangoes and tamarind. Hence the name. I actually made a tart inspired by the candy which you can look back on here.

This was cocktail number 7 in my Cocktails for one IG series. Originally I added Rum. You can too, but it's really great as a mocktail. It has a nice mix of sweet and tart. Here is the recipe which I will also put up on my site later tonight.

    Ingredients

These ingredients for the Dark and Stormy Mocktail make a glass of one, but you can easily scale it out.

    1 Teaspoon Tamarind Paste
    Lots of Ice
    Splash of Mango Juice
    Splash of Ginger Beer
    Slice of Lime
    Mint

Spoon the Tamarind paste in the bottom of the glass. Then fill the glass to the top with ice. Depending on if you want it on the sweeter side or spicy side add the mango juice and ginger beer to your liking. Garnish with a lime and mint.

This turned out great! The store didn’t have tamarind paste so we substituted tamarind concentrate.
