These Raw Vegan Billionaire Bars are made with a vegan caramel sauce with a chocolate protein cookie base and then finished with some chocolate sprinkles and salt. It's decadent, yet deceivingly good for you.
Raw Vegan Billionaire Bars Inspiration
These Raw Vegan Billionare Bars are inspired by two things.
- Reading the Crazy Rich Asians book trilogy.
- The need to use up the Salty Vegan Caramel I made on the 4th of July.
So tell me has anyone read the book? I will offer no spoilers. I love love love it because it's based in Singapore and I love any book that describes places I've lived at in detail. It's so good they turned it into a movie and I can't wait to go and see it.
As the book implies it's about rich Asians, and not any kind, the crazy rich Billionaire kind. Hence the name of this recipe. This snack has a cookie base topped with caramel and then covered in chocolate. It's the classic Millionaires short bread (or twix, hehe). So inspired by the book I just added a few more zeros.
Salty Vegan Caramel
You can find the recipe here. It's super simple and there is no cooking required and super good for you too. It's made with date syrup and cashew butter and some salt. That's it.
Raw Chocolate Protein Shortbread
To make the Raw Chocolate Protein Shortbread all you need is some almond flour, chocolate protein powder, flax meal, hemp seeds, some dates and almond milk. Just process it all in a food processor until it starts forming a ball. Then press it into a small rectangular dish. The one I used was 6x4 inches.
Once you have the shortbread all pressed down pour over the salty vegan caramel sauce and top with some melted vegan chocolate. To add a little dimension and crunch sprinkle more sea salt on the top along with some vegan chocolate sprinkles. The chocolate sprinkles in my sprinkle kit are vegan.
To serve, I would recommend putting it in the freezer for at least an hour for the caramel to harden. Then cut into squares with a hot knife. It's a very messy snack / dessert and tastes oh so sinful, but it really isn't. Looks are very deceiving here and just like the book it's what is on the inside the counts....
Ingredients
Raw Chocolate Protein Shortbread
- 1 Cup Almond Flour
- ½ Cup Flax Meal
- 2 Tablespoons Hemp Seeds
- ¼ Cup Chocolate Protein Powder
- 3 Pitted Dates
- 2 Tablespoons Almond Milk
- 1 Cup Salty Vegan Caramel
Toppings
- 100 Grams Dark Vegan Chocolate
- 1 Tablespoon Coconut Oil
- Vegan Dark Chocolate Sprinkles
- Coarse Sea Salt
Instructions
Make the Raw Chocolate Protein Shortbread
- Place the almond flour, chocolate protein powder, flax meal, hemp seeds, dates and almond milk in a food processor. Blitz until it starts forming a ball. Then press it into a small rectangular dish about 6×4 inches.
- Pour over the Salty Vegan Caramel. The recipe can be found here.
Make the toppings
- Place the dark chocolate and coconut oil in a small pan and melt together. Pour over the caramel and spread until all the caramel is covered. While it is setting sprinkle some sea salt and vegan chocolate sprinkles.
- Let it rest in the freezer for about an hour for the caramel to harden. To cut dip a large knife in hot water and use a slow sawing motion to cut through the chocolate. Then press through to cut thorough the caramel and cookie base.
Clean the knife and repeat the process until you have cut 12 squares. Serve immediately or leave in the freezer until ready to eat.
