    Ube Pie Made with Only 4 Ingredients!

    For real! You only need Ube Halaya, Ube Otap, butter and mascarpone to make this super easy Ube Pie. Oh and it's also does not require any baking. I mean so easy!

    There are so many ways to use the Filipino food we have. You just need to think outside the box. Otap is a great alternative to use for a pie crust. The great thing is that there are so many flavors you can buy. For this recipe it's all Ube.

    The filling is made by combining Ube Halaya and Mascarpone. To me it's such a great combo. It results in a nice and fluffy filling that is not so sweet. Just sweet enough.

    Best of all making this Ube Pie requires zero cooking. All you need is a food processor , a pie tin and a refrigerator. Because of that it can be made a few days a head before a dinner or event so you are not rushing.

    Ingredients

    Here is what you will need to make Ube Pie

    Bowl of ube halaya, stick of butter, tub of mascarpone and package of Ube Otap.

    Ube Otap - You will need 24 individual pieces of Ube flavored Otap. You can get these at your local Filipino grocery store.

    Butter - You can use salted or unsalted. Melt ¼ cup in the microwave for a few seconds.

    Ube Halaya - If possible use home made, but of course the bottled version is good too. You will need 16oz or 2 cups. Make sure it is at room temperature so that it is easier to mix.

    Mascarpone - Use the small 8oz container. Take it out of the refrigerator an hour before making the pie so that it is at room temperature.

    Optional only - Ube Extract. I know I said 4 ingredients and it is. Adding a drop of Ube Extract is optional. It's more to add a bit more color. I urge you to not make it super duper purple. It all depends on on how much color your Ube Halaya has. If it's dark already, it's not needed.

    How To Make Ube Pie

    Ube Otap in Food Processor

    Step 1: Place the 24 Ube Otap cookies in a food processor.

    Step 2: First pulse to break down the cookies and then fully blitz until you get super fine cookie crumbs.

    Step 3: Turn off the food processor and open the top and pour in the melted butter. Close it and blitz for a few seconds until the butter has created a soft wet sand texture.

    Step 4: Spray a long rectangular 14 inch pie/ tart pan (with removable bottom) baking spray.

    Step 5: Transfer the Ube Otap and butter mixture to the prepared tart tin and start to press down to make the pie crust.

    When you get close to the edges of the tin press the pie crust to make a "wall".

    Step 6: To fully compact the Ube Pie crust use a small measuring cup and press down and against the wall.

    This will add strength and hold the pie filling well.

    Once you are done making the pie crust transfer it to the fridge to harden while you make the filling.

    Step 7: Make the Pie filling! Add the Ube Halaya and mascarpone to your clean food processor.

    Step 8: Blend until super smooth and there are no lumps.

    Step 9: If the color is a bit too grey or light for you add just one drop of Ube Extract.

    Step 10: Blend again to incorporate the color. You should aim for a lavender color, not neon purple.

    Step 11: Take out the chilling pie crust out of the oven. Drop 4 heaping spoons of Ube filling on top of the crust.

    Spread it out using a back of a spoon or a small offset spatula.

    Step 12: Make some decorative swirls and put back in the refrigerator to chill and set.

    Ideally you need to have it chill for at least 2 hours.

    If you need it fast you can freeze it for 1 hour.

    How To Serve and Store Your Ube Pie

    Probably the most daunting thing is figuring out how to remove it from the pie tin. All you need to do is leave out the pie at room temperature for 10 minutes.

    Line up 3 water glasses and have your serving board ready next to it. Place the pie tin on top of the glasses making sure it's all even and then slowly push down on the edges of the pie tin.

    It will slide off and you can then place the Ube Pie on the serving board.

    Slice the pie into 8 equal pieces. You can serve it with a dollop of coconut cream or even a scoop of ice cream along with Ube Cookie Butter.

    Or you can just leave it plain to enjoy all that Ube flavor all on it's own.

    If you have any left over you can wrap the individual slices with plastic wrap and store in the freezer for up to 3 months.

    Just take it out and unwrap it and place the frozen Ube Pie on a plate to defrost slightly.

    How to Unmold

    • Take the pie out of the fridge or freezer and leave out the pie at room temperature for 10 minutes. 20 minutes if it's from the freezer.
      Line up 3 water glasses and have your serving board ready next to it. Place the pie tin on top of the glasses making sure it's all even and then slowly push down on the edges of the pie tin.
      It will slide off and you can then place the Ube Pie on the serving board.
    • Slice and serve right away.
