    Iced Salabat (Iced Ginger Tea) Recipe

    Super easy Iced Salabat (Iced Ginger Tea) recipe using fresh Ginger and lots of ice.  It's the perfect refreshing drink on a hot summers day.

    What is Iced Salabat (sa-la-bat) or Iced Ginger Tea?

    Salabat in it's simplicity is fresh ginger boiled in water.  You really have to boil the ginger and leave it to stew in the water to really extract the ginger flavor.  I have to tell you it's intense, but in a good way.  More flavor is extracted from the ginger when it's boiled.

    It's normally served as a drink along side our sticky kakanin (rice based) desserts during Merienda time.

    Every time my mom would say Salabat I would always think she was swearing at me in Tagalog. It's just Ginger Tea.. why so rough?? Bwahaha.

    The tea is normally served warm with a touch of sugar. I did none of that. Instead I added some fresh lemongrass and ice.

    Ingredients for Salabat

    All you need are these 3 ingredients to make this super gingery tea:

    • 2-3 inches of fresh ginger sliced
    • 1 stalk of lemongrass slightly smashed and cut in half
    • 4 cups of water.

    Method to the madness

    Put everything in a sauce pan and bring up to a rapid boil. Turn off the heat and cool to room temperature. Serve with ice and keep the rest in a pitcher in the fridge. You can keep topping it up with water until you no longer taste the ginger.
