    Razons Halo Halo (A Copycat Recipe)

    Razons Halo Halo is a minimalists dream. Made simply with caramelized bananas, milky shaved ice, macapuno and Leche Flan.

    What is Razons?

    It's a restaurant that originated in Pampanga during the 70's. It became super famous from its very minimalistic Halo Halo and now branches can be found all over Manila, Cebu and I believe even in the UAE! They have come so far it's great to see.

    Even though you can get the Razons Halo Halo everywhere now, people still make the pilgrimage to the original location in Guagua. Some say they still make the best version.

    Ingredients for Razons Halo Halo

    This recipe is not a straight copy of the original, as I did make some slight tweaks to it.

    Leche Flan, saba bananas, can of evaporated milk, coco jam, macapuno.

    Coco Jam - Instead of making a brown sugar syrup, we will be using coco jam in it's place.

    Super Ripe Saba - Make sure you use super ripe Saba. If you can't find Saba you can use regular eating bananas.

    Macapuno - One of the key ingredients in Razons Halo Halo. It must have the sweet strings of macapuno.

    Shave Ice - Obviously.

    Evaporated Milk - You can use any milk you have open. Evaporated milk is commonly used for any Halo Halo.

    Leche Flan - The topping that makes this Halo Halo so special.

    Make the Caramelized Bananas

    First you are going to make the caramelized bananas. To do that you are going to boil 2 cups of coco jam with ⅓ cup of water.

    Then when it get's up to a boil, turn the heat off and add the ripe bananas. You are just going to heat through the banana and not really cook them.

    Making carmelized bananas

    Transfer the carmelized bananas to a bowl and leave to cool fully.

    Now let's build the Razons Halo Halo!

    I used a 10oz bowl, but you can use a tall 10-16oz glass.

    Start by scooping about 2 tablespoons of the creamy caramelized bananas and top it with a tablespoon of macapuno.

    Steps on making Razon's Halo Halo

    Add the shaved ice and then pour milk all over the ice. If the milk has melted some of the ice, add more ice and top with more milk.

    Finally add three slices of Leche Flan on the top.

    That is it! I mean how easy and simple.

    To add a little flavor counter point you can also grate some calamansi rind on the Leche Flan.

    Equipment

    • Shave Ice Maker
    • 4 Bowls or glasses 10oz to 16oz in size

    Ingredients

    • 2 Cups Coco Jam
    • ⅓ Cup Water
    • 2 Ripe Saba or Normal Bananas diced small
    • 8 Tablespoons Macapuno
    • 8 Cups Shaved Ice
    • 1 Cup Evaporated Milk
    • 1 Llanera of Leche Flan

    Instructions

    • Make the caramelized banana. In a small sauce pan add the 2 cups coco jam and ⅓ cup of water. Turn the heat to medium and bring to a boil about 3 minutes.
      Once it starts to boil turn off the heat and add the ripe bananas. Stir to combine and transfer to a bowl to cool fully.
    • Once the caramelized banana is cool scoop 2 tablespoons of it into each bowl or glass.
    • Top with 1 tablespoon of macapuno.
    • Add about 2 cups of shaved ice into each bowl or glass and pour milk all over the ice.
    • Finish each Razon Halo Halo with 3 slices of Leche Flan. The size of the cuts is up to you.
    • Eat right away.
