    Ube Rice Krispie Treats (Not So Sweet Version)

    Ube Rice Krispie Treats still made with rice puffs, marshmallow and butter. It's just the not so sweet version so good for those who like it super crispy and not so gooey. The key is a higher ratio of rice puffs to marshmallow.

    I saw Healthy Nibbles make a version of Rice Krispie Treats with more rice puffs than marshmallows. Had to give it a try with the new Ube Cookie Butter just added to the blog. I have to say I agree with Lisa! It's so much better. These seem more refined and you taste the Ube more, as some recipes out there go way over with the marshmallows and sugar just over powers everything. Never ever hide behind sugar especially with Ube recipes.

    Ingredients

    Rice Puffs: I used a 10 oz box. Brown or regular white rice puffs will do.

    Butter: Here we are going to melt it until the butter is a light brown for a little nuttier flavor.

    Marshmallows: You can use either regular or vegan marshmallows here. The size doesn't matter either as you will be melting them down.

    Ube Cookie Butter: This gives it a nice ube flavor and color. You can taste it through the marshmallow and you don't need to put in any additional artificial flavoring. Make a few jars using my Ube Cookie Butter Recipe or buy some via Ninong's Dessert Lab.

    Optional: Crushed Polvoron Cookies. These give an additional crunch, but totally optional.

    How to Make Ube Rice Krispie Treats

    Use a heavy bottomed large pot. Melt the butter in the pot first on medium heat. Once the butter is melted, turn the heat down to low and brown the butter slightly. Making sure its more on the gold side than the brown side.

    With the heat still on low add in the marshmallows and mix with the melted butter until gooey. Add in the Ube Cookie Butter and stir until you get a nice dark lavender color.

    Turn off the heat and add in the rice and ube polvoron (if using) and mix well. This is the hardest part. It is best to use a wooden spoon and just stir and stir until all the Ube marshmallow goo has coated all the rice. Don't forget to go deep into the bottom of the pot. Mixing Ube Rice Krispie treats is such a good arm workout, but it will be so worth it in the end.

    Steps 5 to 8 on how to make Ube Rice Krispy Treats

    Once it is all mixed transfer the mixture into a 9x13 inch pan that is lined with either plastic wrap, foil or parchment paper. You can use any liner just as long as you have some overhang to help you lift up the set Ube Rice Krispies.

    Flatten it with your hands and make the top as flat as possible. Leave to set on the counter for 20 minutes.

    How to Serve Ube Rice Krispie Treats

    Lift out the treats using the liner overhang and place on a cutting board. Here you can cut them to any size you want. You can go as small as cutting 40 squares or as big as you want.

    It's best to eat them right away for the ultimate crispy factor. You can leave them covered in a cake dome for up to 3 days max, but they should all be gone by then.

    Equipment
