This Buko Pandan Halo Halo has pandan jelly, macapuno and Buko ice cream. With the addition of shaved ice the classic salad is turned into Halo Halo.
I mean in all honesty this could pass for Buko Pandan salad. Instead of cubed Pandan Jelly, it is simply set in the bottom of the glass and layered with macapuno strings ice and Buko ice cream.
Sometimes, you just have to do it for the aesthetics and of course less work and prep time.
Pandan Jelly Ingredients
The first thing you need to make is the pandan jelly. This is what you will need to make it.
Buko Juice - Buko means young coconut. If you are in the Philippines or other tropical areas where you can get fresh Buko juice please use that! Otherwise get some good bottled coconut water.
Agar Agar Powder - Is a vegan way to make jelly. The powder comes from seaweed and to activate the jelling power it must be heated up to boiling for about 5 minutes.
Sugar - To add a bit of sweetness.
Pandan Extract - You don't need much just half a teaspoon of extract is good.
How to Make Pandan Jelly
All you need to do is pour in 2 cups of Buko juice, 1 tablespoons of agar agar powder, 2 tablespoon of sugar and ½ teaspoon of pandan flavoring in a small sauce pan.
Mix well and put on the stove on medium heat and bring it up to a boil. Turn the heat down to medium low (but not too low) and keep it simmering for 5 minutes. You should still see bubbles forming at the top.
Pour the jelly into each of 4 glasses. Leave to cool at room temperature. It should harden on it's own without needing to put it in the refrigerator.
Ingredients for Buko Pandan Halo Halo
You will need Buko and pandan everything!
Pandan Jelly - Already set in each glass.
Macapuno - Gives a nice chew and more coconut flavor to the Halo Halo.
Shaved Ice - It's really the main event.
Evaporated Coconut Milk - You can use normal coconut milk if you can't find the evaporated version.
Pandan Wafer Sticks - One stick per person.
How To Make Buko Pandan Halo Halo
Once the pandan jelly has set, spoon in about 1 tablespoon of macapuno over it.
Then stuff about 2 cups of shaved ice into the glass and pour in the evaporated coconut milk over the ice.
Finish off the Buko Pandan Halo Halo with a scoop of Buko ice cream and a pandan wafer stick.
So super maganda and sosyal! Nakş! Now all that is left to do is mix mix or halo halo it up!
Tell your guests to get down deep to scoop up the pandan jelly. Now it looks like Buko Pandan Salad.

- 2 Cups Coconut Water
- 1 Tablespoon Agar Agar Powder
- 2 Tablespoon Sugar
- ½ Teaspoon Pandan Extract
Buko Pandan Halo Halo
- 4 Glasses With set Pandan Jelly on the bottom
- ½ Cup Macapuno Strings
- 8 Cups Shaved Ice
- 1 Cup Evaporated Milk or Regular Coconut Milk
- 4 Scoops Buko Ice Cream
- 4 Pieces Pandan Wafer Sticks
Instructions
- Make Pandan Jelly - Pour in 2 cups of Buko juice, 1 tablespoons of agar agar powder, 2 tablespoon of sugar and ½ teaspoon of pandan flavoring in a small sauce pan.Mix well and put on the stove on medium heat and bring it up to a boil. - Set Pandan Jelly - Divide the cooked jelly equally between your 4 glasses. Leave to set at room temperature for 20 minutes. No need to refrigerate .
- Make Buko Pandan Halo Halo - Spoon about 1 tablespoon of Macapuno over the set pandan jelly. Add more if you feel like it.Then stuff about 2 cups of shaved ice into each glass and pour in the evaporated coconut milk over the ice. Use about ¼ cup for each glass.Finish off the Buko Pandan Halo Halo with a scoop of Buko ice cream and a pandan wafer stick.
